Pretty much. It's all poor people food. It was created because it's all people had and it lasted several meals. It's why I also laugh at people in New York who pay $90 a plate for an "authentic" Ethiopian dish, or the like.

Exactly. And "real" chili and porridge and stew and gumbo are all basically from the same recipe:

What is left over from that animal (dog, horse, cat, coyote, alligator, snake, squirrel, rabbit, etc) that we just can't eat without seasoning it so much that we can't taste it? Oh, that piece of gristle just outside the *******? Throw that in the pot with the horse eyeballs and the pig ***** from last week. Make sure you put a lot of those hot ass peppers in it. I don't want to taste the eyeballs again.

Thats "real" ****ing chili/gumbo/stew.

They introduced me to real cajun when I was back at school. It is hard to find anything worthwhile in Dallas though, so now I make my own.
