Getting stagnant with healthy dinners at our house. Whats a healthy meal that you cook that you and your family love?

I need some ideas.

Something simple that I make are Turkey or Bison quinoa patties.

I boil a half cup of quinoa and let it cool, then pour it on top of my pound of meat and mix throughout. It almost acts as a breadcrumb to make the patties. Then I cook on the skillet. Me and my wife love them with a little mustard or ketchup in her case. no bun. I serve it with some type of vegetable. They are really good.

so...what do you got for me? Also not opposed to slow cooker meals.

we cook a lot of stuff from these two cookbooks:

https://www.velopress.com/books/racing-weight-cookbook/

https://feedzonecookbook.com/about/

most of the meals are fairly easy to make.

Probably my favorite meal these days are grilled mollejas with sides of pico de gallo and guacamole.

Boil the sweetbreads for about an hour in salted water. Cut them lengthwise into about 2 inch wide strips. Season as you wish, but I like the Fiesta Brand Fajita seasoning (I know it has msg, but msg makes everything taste so good).

Grill on fire until they reach your desired crispiness. So delicious. Even the kids love them.

Also, its the time for crawfish. I can't ever get enough crawfish at a restaurant - or it's too darn expensive, so I'll boil around 15 lbs at the house. The wife and kids won't eat them.

Well, healthy is a relative term. Do you mean heart healthy? Or low calorie? You get my point.

But, I found that these guys have some good quick recipes. They're vegan, but it's not hard to add in some chicken or something else.

Marine Mash - ground venison or bison, quinoa, and kidney beans. Salt, pepper, chili pepper, whatever you like.

Cook the quinoa and heat red beans and add to ground meat as it finishes up. Add a little grated cheddar on top and you can even add plain greek yogurt. Easy and delicious when seasoned well.

We just did stuffed bell peppers the other night. Used about 1/2 lb of lean ground beef, diced onion, diced Serrano, taco type spices and seasoning, about a cup and a half of rice/quinoa blend (cook before adding to peppers; which makes about 2.5 cups) and some salsa to stuff 6 bell peppers. Topped each with a bit of shredded 2% cheese blend and baked them for about 35 minutes. One pepper is good for a meal...so that was 3 meals for the two of us.

CRANBERRY-ROSEMARY ROAST CHICKEN https://paleoleap.com/cranberry-rosemary-roast-chicken/

I add rice to mine.

Honestly, I haven't eaten a bad meal on that site. It's Paleo, so it lacks carbs, but most of it pairs really well with rice or some kind of carb.

First time I had it was at My Fit Foods - think their name was Mario's Marine Corp Mash. Called it that ever since.
