If someone hit your car in a parking lot and took off, what clause of your insurance would cover that, uninsured motorist?

To file on uninsured motorist your insurance company may require an accident report from the police. Since it was on private property the police may not provide one. Best thing to do is call your agent and ask what their procedure is to file on uninsured motorist then go from there.

You can usually file a police report online even if they won't come out. They won't investigate, however. There are, obviously, penalties for filing a false report.
