1 lb dried black eyed peas
8 cups of water
6 slices bacon
1 onion, chopped
1 green bell pepper, chopped
1 cup fresh parsley, chopped
1 bunch green onions, chopped
1 small jalapeno pepper, minced and seeded
3 cloves garlic, pressed
1/4 teaspoon hot sauce
2 tablespoons worcestershire sauce
1 1/2 teaspoons salt
1 teaspoon pepper
1/4 teaspoon thyme
1/4 teaspoon dried oregano
1 lb smoked sausage, sliced
1 1/2 cups chopped smoked ham (equal to about 1/2 lb)
1 (14 1/2-oz) can cajun style stewed tomatoes, undrained (If you can't find these, use fire roasted instead)

wash peas, put in large pot, add water to depth of 2 inches above peas. cover, let stand 8 hours or overnight

drain peas, return to pot. add 8 cups water; bring to a boil. cover, reduce heat, and simmer for 30 minutes, stirring occasionally

add bacon and every ingredient except for ham, sausage, and tomatoes. return to a boil, cover, reduce heat, and simmer for 30 minutes (or until peas are tender)

add sausage, ham, tomatoes. return to boil, cover, reduce heat, simmer for 30 minutes.

makes about 15 servings.

start with fresh black-eyed peas from DiIorio's in Hempstead.
They have some freshly-shelled & flash-frozen. Better than dried.

it's crazy. it was always a family tradition to have our cajun black eyed peas/cabbage for lunch new years day while watching the cotton bowl.

still blows my mind it's on the 7th this year.

yeah...thats the family recipe.

the wife and i cut everything in half. (plus, it's also great to use as a salsa with chips)

Do you cook the bacon at all before adding it to the pot?

Sounds yummy! Substitute kidney beans for the BEP and that would probably make a great batch of cajun red beans and rice.

i cook the bacon before (usually for breakfast, using the leftovers for the recipe). crumble them up and throw them in.
my parents always used the bagged bacon pieces you can get at the store.

as for a cabbage recipe, it's not the best i've had, but it's pretty simple to make. (i'll normally make this on new years eve so the black eyed peas can cook in the crock pot on new years day)

1 medium sized head of cabbage
1/2 - 1 onion, chopped
1 can cajun stewed tomatoes
2 cans tomato soup / 2 cans water
1/2 teaspoon salt
1/4 teaspoon black pepper

throw it all in a crock pot, stir, and let simmer for 7 hrs or so. stir occasionally. (4 servings)

MBL's Cabbage Recipie

1 head of Cabbage
Butter/Marg
Olive Oil
Garlic
Salt/Pepper/Various seasonings
Al Foil

Quarter the head of cabbage going through the part where the cabbage head connects to the rest of the plant. Drizzle with olive oil, sprinkle with salt, pepper and various other seasonings. I've tried a little Tony's, garlic salt, seasoned salt, and others and it all is good. Wrap individual quarters in foil. Before sealing the individual foil packets, put a healthy dollop of butter/marg inside the packet and seal it up. Place on the grill with the broad side down. Don't leave on direct heat. No need to turn, flip, or otherwise mess with them. Should be ready in about 30 mins. Best enjoyed with a flavorful lager from Milwaukee.

I just throw a s***ton of pork, onion, pork, garlic, tomato, pork, chicken stock, seasoning and pork in a pot and let it cook. Cabbage or Black-eyes both.

I've got some roasted hatch Chiles I think I'm going to toss in ours.
I made a big pot of pintos on Christmas Eve and put some of the chiles in the cornbread, it turned out great.

Agreed. I think ham hock instead of the sausage is the better route IMHO.

Ring of sausage with pot big enough to hold it without cutting, cover with water +2", 1/4 a head of cabbage and lay wedges over sausage, bring to a boil, cover and boil for +/- 25 minutes....mighty fine eating!!

For the beans, you put them in the crock pot to boil? Or a regular pot? Hard to boil in a crock pot, no?
