Architect here: Having done a couple of restaurants myself, I usually hire a consultant to do that part of the project while I manage and focus on the rest of the building and site improvements. It can be highly technical and by bringing in an expert that knows the equipment, can be the best combination. Just a thought.
This was going to be my suggestion as well. I've never built a commercial kitchen that wasn't detailed by a kitchen consultant. I don't know any local consultants, only national companies, but if you're looking for someone local I can reach out to my AIA friends.
