I agree with Christopher's.

Saltgrass went to Salmon only during COVID, which I don't like. I did notice on a recent email they are bringing back their blackened redfish which is very good.

Seafood is really lacking in this town. Any time I go to Florida or the Caribbean I pretty much eat seafood non stop to make up for the lack of local good stuff.

Not a lobster tail entree or a seafood restaurant, but 1860 Italia's Lobster Carbonara is excellent.

Lobster tails are not as easy to get right as some assume. The more common "warm water" ones tend not to be...that good (unless fresh from the source). The "cold water" ones are frightfully expensive (Veritas did a whole sashimi one from time to time and I imagine it was the cost of a monthly mortgage), and few restaurants hear would be able to price them attractively. They are also terribly easy to dry out. Poaching in butter makes a difference. Shrimp and crab are just much easier crustaceans to manage.

Take a cold water tail and an injector. Melt and clarify butter, then add lemon, smoked paprika and garlic to it to taste. Take your injector and slide it under the shell between the meat and shell on top and bottom and generously inject the butter mixture on the top and bottom of the tail. Grill the tail on high heat and then live in nirvana for a few bites

Technically there's not really a good seafood place in town..

a GOOD place wouldn't fry everything and add cajun seasoning to everything...

A GOOD place would have Oysters, clams, mussels, geoduck, razor clams, clam chowder, lobster, prawns, shrimp, crawdads, tuna, flounder, sea bass, etc etc...

This reminds me of my most recent and only experience of eating lobster tail.

Went to Vegas with the future in-laws during the Christmas holidays. Walked around Fremont Street people watching and worked up an appetite. Gf's dad sees a sign advertising "Steak and Lobster $10.99" and he's immediately sold on it. There was no way I was telling him no. First time in Vegas for him but how on earth could anyone think that a steak dinner alone can be edible at $10.99? Add in the lobster tail and it must be awful. I forced a couple bites of the steak down and attempted the lobster. Stomach was in shambles the rest of the evening and if you've been in a casino you know how difficult it is to find a restroom.

Now that we are on the topic, what is the market price for good lobster tail at an actual seafood restaurant?

I wouldn't get my hopes up. A seafood place of the scope that you're describing doesn't sound very bankable here, particularly with the covid hangover going on. Places like that are closing in bigger cities.

If someone were to do it, they'd be well advised to make it very small.....

I just went to Galveston for a day trip on MLK day. The food definitely wasn't anything special at Nick's, the service wasn't great and the place is being remodeled so not the best experience altogether.

Never went there... didnt know they had something like this... oh well..

but I've tried uni and salmon roe... not a fan... salmon roe was like eating soap bubbles... literally tasted like soap to me.. and I've tried it in a few different places....

oh well..

People here in Texas looking for good lobster seems akin to people in Maine looking for good barbeque. You just can't the real thing unless you are eating in that region of the country.

Just go to HEB and buy some frozen king crab legs and steam them yourself, all this lobster talk is nonsense, everyone knows king crab is the most delicious thing to come out of the ocean, frozen or not.

But I agree our seafood options here are sorely lacking. It's all fried crap. You know your town is lacking when the olive garden of seafood, Red Lobster, can't even survive.

That place is terrible. Gave them 4 tries and got worse each time.
Service is always subpar … only thing worse than their food is their parking lot design.
