Tomorrow night during the A&M Game I plan on consuming much beer and frying some catfish. I want a new recipe.....tired of the same old thing. Somebody hook me up!

P.S. HEB has a great "meal deal" going on....2 lb catfish, cole slaw, picante, Dr Pepper, and tortillas for $5.50!

Try dredging your catfish in yellow mustard and then breading, then straight to the fryer. It really adds something unique. The mustard does not overpower the fish, as you might think.

What AC said....plus add Louisiana Hot Sauce at a 1:1 ratio: ie; 8oz. Mustare to 8oz.LHS Soak fish in this for a little and then dredge in your favorite breading.

What AC said. I use mustard and milk. I also mix 1:1 Zatarin's cajun fish batter and cornmeal for breading.

I do the same as AC, but as they come out of the fryer I put them into a brown paper sack with paper thin slices of lemon and green onion. Give the sack a shake. The steam from the fish makes the veggies adhere. Mmmmmm.

I've always heard the yellow mustard was intended to take out any strong fishy taste. I usually drizzle a mixture of water and mustard on my fish before seasoning and battering. I've never used enough mustard to affect the flavor of the fish though.

My dad has cooked fish that way for as long as I can recall. I didn't know that there was anyother way until I moved out.
