Plus or minus 50 miles or so. Or anywhere between Llano and the Austin area.

Thanks for the help.

Hudson's is probably the most renowned.

Used to use Kleins but think they are closed, have used Hudsons the past few years just because dropping a carcass off downtown is fun. Have used Hills of TX when out at a freinds place in Llano.

We'll go out of our way a bit to go to Hudson's and get them to make jalapeno cheese links
Chorizo is good too and their survival sticks are decent

Miilers stopped processing deer 6-7 years ago. The state began requiring t completely separate equipment for wild game, and my guess is his meats business became much more profitable.

He makes awesome sausage and has a great store. And Bryan Miiler is good people.

I appreciate everyone's input. I usually go to Slovacek's in Snook but can't get over there this time. Love their sausage. All of it.

If your priority is sausage then I vote Hudson's.

Just picked up my first deer today from hunters creek in liberty hill. Haven't tried anything other than the jerky yet, but it was great. Talked to the owner today (I think) and he's an Ag class of 08. I recommend it.

Another vote for Hunters Creek here. Been going there for years and always had a great product.

Stonewall smokehouse. I try to stick with the Germans for sausage and Salami making. Is that racist?

Do you still not get your own meat at Hudson's? Could never get past that.

I cut what I want out first and rest is ground meat or sausage. So I don't worry about it

For anything ground that is correct. They told me "we take in way too many orders to be able to clean our grinders between every order, so we just do large batches to fulfill multiple orders at a time so there's no guarantee it's only your meat you are getting back". For steaks, fajita meat, etc, they claim it's your own meat.

Kleins in Boerne, a little further out but good.

Dropped it off at Hudson's in Marble Falls. If I get another deer this season I will go to the one in Liberty Hill.

I usually get backstrap, jerky, smoked sausage and summer sausage. When I get two deer I also get some chili meat.

I will report back in a few months.

Really appreciate all the input from y'all. I love Slovoceks in Snook but it's just too far.

Grandsine's in New Braunfels is really good....but they'll charge you $60 for de-boning (if you don't do that already)

This is the VERY reason i haven't been to Hudson's in years....

Last time I was there (at least 20 yrs ago) I was in line to drop my deer off. At that time, they were filling out orders ahead of checking them in and stuffing the orders in the body cavity. A gust of wind came up and blew about 4-6 of the orders out of the deer cavity's that were in line to be checked. The knucklehead that was helping out just picked up the orders and started stuffing them into the deer. I asked "how do you know that order is for the deer you just put that into?" and the reply was "does it matter?"

That was it for me and Hudson's.....
