Brisket knife recommendations

How long do you want to ignore this user?
Looking for recommendations from the OB.

I used a good kitchen knife for years and struggled to get consistent thin slices, so I got a true slicing knife.

I read good reviews about the Victorinox meat slicer so went with that, but it wasn't that sharp to begin with and I can't get it to sharpen enough to slice well.

Well… I was gonna recommend the Victorinox/Forschner with the Granton edge.

What sharpener are you using. I have have good results sharpening all the victorinox knives I own, including the slicer. I use a spyderco tri-angle and finish with leather strop

I like the finish, but it is not for everyone. Luckily Dalstrong has several styles/finishes.

I feel like the knife wasn't that sharp to begin with, but I use a honing sharpener for each cut and do my best with a wet stone periodically. It's challenging, that's for sure.

I may have to look at buying something like this though. Sounds like it takes care of the precision problem, especially difficult for me with this slicing knife. Fast enough to use each time as well it looks like.

I have a lot of victornox which I like but my go to is the meat eater benchmade I bought. It's also the best looking knife.

Bought a dalstrong for myself for Christmas. It looked cool and got good reviews. Was about as sharp as one of my butter knives, but cost ALOT MORE. Returned it. Picked up a wusthoff carving knife while on the way to visit family at the outlet in Missouri. Super sharp. Very happy. Pairs well with the recteq smoker I also got myself for Christmas!

I have the Franklin 6" prep knife, and it is dangerously sharp, so if the slicer is the same, it should do nice work.

I have the Dexter slicer…works great on brisket. I think it's about $35 on Amazon.

Been using a Wustoff Gourmet 14" Hollow Edge for the last 7 years or so. Love it. Stays super sharp.

Mercer M23210. It's technically a bread knife but does a tremendous job with meats. Carbon, stainless steel. Sharper than hell.

You can get that Franklin model at HEB as well.

I got the prep knife for Christmas - sharper than anything that we have in our drawer and I've cut myself a few times.

Someone posted this blog post a year or two ago where they surveyed a bunch of different bbq joints about what knives they use.

I have the Victorinox-Swiss-Army- 47645 Cutlery Fibrox Pro Slicing Knife, Granton Blade, Black, 12-Inch for slicing and it's great.

I bought this Old Hickory (14 inches) from Smokey Mountain Knife Works. $25 and carbon steel, which is easy to sharpen. I went cheap because I probably do a half dozen briskets per year. It works great.
