I mean, you can fry just about whatever. People are just not going to suggest it for good quality eating fish.

Frying generally is done with lesser cuts.

Trout and Redfish are both gamefish in Texas (more desirable fish).

But yes, fried fish is fried fish. Just keep in mind that game fish will be a little drier as they don't have the dark meat of trash fish like catfish.

My dad still prefers to fry fish if he's making fish at home. That probably goes more to his redneck / east Texas roots than anything. He enjoys well prepared grilled fish out.

It's a bottom feeder known for greasy meat. That's why it's fried. While we live in the south, most of the country thinks we're idiots for eating such a disgusting creature. Yet we know just about anything is edible and often better fried. Well that and our ken that started eating it were looking for cheap food. Hince modern fair cuizine.

There's a reason it's generally not on the seafood restaurant specials blackboard next to and prepared in the same way has mahi mahi, sword fish, or Redfish on the halfshell.

Another reason for deep frying fish and shellfish was to guarantee that you would kill any bacteria that could make you sick due to not being able to ice fish down.

I don't know about that. Got my degree in WFS from TAMU. Worked for two large catfish farms for a few years shipping catfish all over the US. Lots of restaurants sell it blackened, grilled or fried. Handled and prepared correctly it is not greasy.

Not all catfish are bottom feeders. Channels yes. But blues and yellows primarily feed on other fish. Larger blues will often be caught in open water chasing shad with striper/hybrids. My relatives in the Florida keys fry just about everything they catch. Snapper, grouper, mahi, doesn't matter. Hell, they even fry whole lobster tails on occasion.

I don't think it's redfish. The fillets are too short for a redfish. A redfish fillet would be much longer, proportionally, than that fish.
