It's a bottom feeder known for greasy meat. That's why it's fried. While we live in the south, most of the country thinks we're idiots for eating such a disgusting creature. I don't know about that. Got my degree in WFS from TAMU. Worked for two large catfish farms for a few years shipping catfish all over the US. Lots of restaurants sell it blackened, grilled or fried. Handled and prepared correctly it is not greasy.

There's a reason it's generally not on the seafood restaurant specials blackboard next to and prepared in the same way has mahi mahi, sword fish, or Redfish on the halfshell.
