Had a big haunch of deer from a buck that I killed in '17. Got the MeatEater Fish and Game Cookbook, and decided to try their perfect roast. Salt and Pepper, sear, then oven till 125* in the thick part. Results were awesome! Tasted damn good. Going to try one of the compound butters tomorrow and smear it on the leftovers.
