North of 290 they call them breakfast burritos.
This is key to scrambled eggs, and many just can't grasp this concept. Dry scrambled eggs suck. You have to stop cooking when they're still a little runny, and they'll finish cooking once you've taken them off the heat.schmellba99 said:
Flour tortillas - preferably the raw dough ones I cook from HEB because they are the shiz
Eggs, scrambled but not overcooked
Chorizo, pork sausage or bacon. Or all three. Or any mixutre of them.
Monterrey jack cheese
Sadie's salsa
Sht. Now I am hungry.

Breakfast tacos are "whatever's left in the fridge" thing for me-
One of my favorites is burnt ends or chopped brisket fried in a skillet until crispy, crack a couple eggs in it and throw it on a corn tortilla with cheese and green salsa.

A taqueria in town that only accepts cash has one called "El Suicide". It is flour, eggs, sausage, bacon, chorizo, cheese, refried beans, & potato.

If I'm somewhere that knows how to cook:
Lengua de res, huitlacoche, pureed or chopped fresh jalapeno in a corn tortilla
