I have a huge brisket (19lbs before trimming) so I'm trying something new with this one. I separated the point from the flat and going to try burn ends for the first time. Will report back how it goes.

Good luck. What's your plan for burnt end sauce? I saw a Dr pepper burnt end recipe that intrigued me, but I haven't tried it yet.

I've read a lot of different recipes for sauce and I'm not sure what I'll end up using yet. I think I'm going to just make It up as I go, haha,
Planning to start with some Sweet Baby Rays sauce, butter, a shot of whiskey, and honey for a candy glaze texture. I'll adjust as I taste it.

I actually cooked a brisket and ribs for dinner tonight. Everything came out great as usual!

Finished product. They came out delicious. Nice and juicy with a candy glaze.
