Plus I add my own seasoning to the mix, no set recipe but it includes garlic and onion powder. black pepper sea salt, a little bit of crushed red pepper, sometimes tony's, and then some hot ground caynne cajun seasoning.make sure it's mixed good and it gives everything a little be more fire.
I like to cover mine in yellow mustard, sprikle it with Tony's and then toss it in a bag with the Zatarain's lemon pepper fish fry mix, shake it up and then drop it in hot peanut oil. Everybody loves it.
I actually mix the flour with some beer first to make a some what thick batter. Then I mix in some tony's. It will coat the fish really well and stick. You will be surprised how lite the batter comes out. Does not taste very heavy at all from the frying
White cornmeal will come out with a lighter color than yellow, if that sort of thing matters to you. I soak the fillets in buttermilk and mustard, lay em out and sprinkle with Tony's, then shake in white cornmeal. Sometimes I'll add Louisianna fish fry mix to the cornmeal, but typically I'm frying crappie and I hate to overpower the delicate succulent deliciousness that is crappie meat.
