How would you define not well-known OP? Eddie Van Halen is extremely popular and mainstream. While Buckethead is well-known among guitar players.

No one, in my opinion, can combine shredding technicality, with tasty, emotional licks, quite like Opeth.

And both guitarists can do it.

I have seen them the last two years at The Sands Rocks and they are still awesome live. The lead singer is very approachable as well.

If you want shredding strings 2Cellos has a bunch. I mean they literally shred the bows.

I know what you're thinking. What the hell is he doing posting this video here? I was absolutely dumbfounded when I first learned about Sister Rosetta Tharp. The guitar solo starts at 1:23. If you listen closely at 1:45, that is the instant in time when she invented rock and roll.
