Another Bond Film: Opening scene of Casino Royale.
The Dark Knight heist scene... sets the tone and introduces perhaps one of the best villains in any movie.

The first shot in Star Wars as the cruiser/destroyer passes over changed what movies could be.
But one I would throw out there off the wall is Up. 10 minutes or so with almost no dialogue that sets the movie and left many in tears...as an animated movie. Pretty remarkable.

If you want sad, UP will mess up your feels really quick in the intro.
It's not as good as these already listed but I always liked the opening montage credits of X-Men Origins: Wolverine where it shows he and Sabretooth fighting in all the wars from the Civil Wat to Vietnam. The rest of the movie is just ok but the opening credits are cool.
And I see Raiders of the Lost Ark mentioned but the Last Crusade opening scene was fantastic

This image basically changed my 5 year old life forever. It can be argued that it changed cinema forever.
To see this for the first time, with the dramatic John Williams score, the sheer size of the ship filling the entire screen and the sound of the laser fire back and forth...........it was awe-inspiring and can't be matched.
Entire opening scene?
Lots of good ones already mentioned, so I'll throw the dairy farm scene from "Inglourious Basterds." May be Tarantino's finest moment.
