Yes, ROTJ ventured into "kiddie" territory with the Ewoks and 99% of people nowadays say that was the weakest part of the OT. When I rewatched TPM the other day I could see a clear difference between the CP3O/R2-D2 moments of levity in the OT and the sheer stupidity of Jar Jar.
I think the Disney+ shows, outside of Andor, have catered way too much to being "kiddie" instead of being simply something that kids can watch alongside their parents. Its this fine difference that has turned off the majority of long term Star Wars fans who are giving up on Disney Star Wars.
Now, go ahead and tear me a new one (but hey, if you do enjoy the Disney+ stuff more power to you, no ill will here).

I would say the real problem is nobody at the top is keen to move away from proven money makers. They'd rather have Mando/Grogu make $175 m at the domestic box office knowing full well it will make hundreds of millions in toys and merchandise rather than rolling the dice on something that veers off in another direction and have it be a flop that also doesn't sell any merchandise or promote any theme parks.
Plus, all of the success is built off the original trilogy. The prequels were dazzling visuals but they all were just a 6 hour journey to seeing Anakin put on the Vader mask. There wasn't a new story, just how we got to the first story The sequels, which I enjoyed more than most, were just familiar beats on the original theme - a random kid from nowhere rises up to defeat the #1 evil and redeem the #2 evil.
The first season of the Mandalorian was the most original thing Disney has done since it took over, but then it needed to tie back into the world of Luke Skywalker. I love the 2nd season of Mando and have watched the Boba Fett, Luke and Ahsoka episodes over and over, dozens of times, but it's still a new property making a U-turn to the old neighborhood.
For Star Wars to have the guts to really go in a new direction, Starfighter has to succeed in a big way. They certainly seem to have all the tools in place for that to happen with the cast and the director.
I think the one fallacy in your statement is that "a majority of long term Star Wars fans are giving up on Disney Star Wars". I think it's just the opposite. They are the ones still thrilled by the like of the Ahsoka and Obi-Wan series - I know, I'm one of them. Star Wars is losing its popularity because the new stuff isn't resonating with kids as they move into teen years and young adulthood because their first experiences with the saga are either not that memorable or with characters that aren't "theirs" - they aren't all that new. My generation got the OT in elementary school and then went 16 years without a new movie, but were just as rabid in 99 as we were in 83. I was 9 in 83, 25 in 99 and saw TPM three times on the day it came out.
I can't see kids today having the same fervor when their exposure to SW is on the small screen.
