These got me through college...

Baked chicken thighs served with rice and broccoli. Stupid cheap and easy.

Giant pot of homemade tomato soup with grilled cheese. (I doubled this recipe and then freeze the soup in individual servings for lunches)

Chicken stir fry is cheap & easy, too. Chicken, frozen stir fry vegetables, stir fry sauce, all served over rice.

Fried rice was another college favorite. Rice, onions, carrots, peas, soy sauce and eggs... quick dinner! If I had other vegetables, I'd throw those in, too.

Meatloaf and mashed potatoes are always good options.

Cheating "street tacos" were another favorite. Corn tortillas, grilled chicken, and whatever vegetables we had on hand. We'd usually use canned black beans, sauted onions, canned corn. My roommate would put lettuce on hers... but I'd just add more cheese to mine! Not the cheapest, but was a great use of those random cans of corn and beans that everybody has in their pantry.

I still like to just grill chicken (marinated in whatever I have on hand) and vegetables. Onions and broccoli are cheap and turn out great in a grill pan.

HEB has frozen bags of fajita vegetables, which are great. I saut those with fajita seasonings and then put them on top of a cooked chicken breast. Sprinkle with cheese and you have a cheap dinner!

"Everything in the freezer" soup is always good. Whatever frozen vegetables you have on hand (or canned vegetables), go into a pot with chicken broth with rice. Simmer with whatever seasonings you want. This was a tradition when we'd run out of space in the freezer.

When we were skimping/saving, we would make a roast on Sunday, sandwiches for lunch monday, the rest for stew monday dinner Tuesday lunch. Chicken spaghetti Tuesday dinner-Thurs lunch. Goulash or lasagna bake Friday and Saturday.

All in, was less than 100 for the week

You can buy a "pork rib-eye roast" at HEB. They're delicious and cheap, if you want some meat. About $4 for a 3 lb roast, I think

yes and they have initial cost plus becomes a ****ton of washing. May be cheaper but takes a lot of time and that is more important.

Plus, you can't just throw a ****ty diaper in the wash. It has to be prewashed. And they make little sprayers that attach to the toilet, but also an added cost.

If you are debating cloth diapers, my friends did it a good way. They figured out their kids pooping schedule, and put a disposable on him until he pooped, then changed him to his cloth diapers. Of course this only works when they are athe least a few months old and have more of a poop schedule

Lots of good low cost/cheap meals out there that taste good. Now if you want cheap AND fast:

1 lb of the cheapest frozen meat you can find....bring home, boil and "cover" in ranch dressing. Fast and cheap when "Aint nobody got time for dat" hits.

This reminded me of one.

Buy 2-3 pounds of chicken breasts, put in crock pot and cover in franks wing sauce. Add a packet of ranch mix, and cook on high for 3-4 hours

Bag of pinto beans, 4 cups of water, 2 table spoons chili powder, one table spoon black pepper, tea spoon salt, tea spoon paprika, and a link of thinly sliced pork sausage in a crock pot on low for 7-8 hours.

Cast iron skillet. Whole chicken. Potatoes, onions, whole garlic cloves on bottom of pan. Set seasoned and buttered chicken on veggies and cook. Make toast. Spread soft garlic on toast.

Win. And cheap as dirt.
