Anybody got any ideas on how to mimic the recipe for queso from Fuego Tortilla Grill in college station? I've had it a few times but I don't live up there and I can't seem to find any good recipes for it. It tastes quite a bit different than the typical velveeta/rotel queso.
I'm assuming it uses some type of mexican white cheese, some heavy cream or half and half, and some poblano peppers. Anybody tried anything similar or have a good recipe for white queso dip that doesn't use the cheese loaf?
