Anybody got any ideas on how to mimic the recipe for queso from Fuego Tortilla Grill in college station? I've had it a few times but I don't live up there and I can't seem to find any good recipes for it. It tastes quite a bit different than the typical velveeta/rotel queso.

I'm assuming it uses some type of mexican white cheese, some heavy cream or half and half, and some poblano peppers. Anybody tried anything similar or have a good recipe for white queso dip that doesn't use the cheese loaf?

i've never eaten there but I could probably drum something up.

it wouldn't be hard to roast some poblanos, chop em up, and throw them in some queso fresco with some heavy cream.

Sounds like you are looking for Queso Fundido

The good news is that if your standard for Queso is Velveeta and Rotel you have no where to go but up

I made a recipe really similar to that Queso Fundido last night, but the texture never really came out right.

I started looking around on Google and reading about queso recipes that require you to first make a Roux and then add milk, heat it and let it thicken, and finally add in the cheese and flavorings. Anyone ever tried anything similar to this?

How is this place Fuegos? Is it a restaurant or just a taco house. The menu online doesnt make it seem that it is a sit down kind of place. TIA

Fuego to me is amazing. Great tortillas, great queso, all of the meat choices are solid. Its mostly just a taco place, maybe like a glorified taco cabana but the quality of food is so much better. They have tables inside and a drive thru, although at peak hours sometimes you have to wait to order because there aren't any tables available.

Definitely a place I hit up every time I go back to visit college station.

That said you may not want to try the queso or you will find yourself having random cravings for it and so far nowhere in Houston comes close.

For those of us who haven't been to BCS in a long time, how would a place like Fuego compare to oh, say, Chacho's in Houston?

I've never been to Chacho's sober and never been to Fuego drunk.

I think Fuego is nicer/cleaner but Chachos loads everything up with cheese so it's a tough call!

There's a white queso in the refrigerator section at Costco in Houston that tastes pretty similar. It has more of a green Chile flavor to it than fuego queso, but is otherwise pretty similar.

Still not homemade, but more widely available.
