Same sauce and for the filling

1 Tbls peanut or vegetable oil
1/2 large onion finely diced

1 jalepeno extra finely diced

doubled the recipe and and tested it over a couple tamales instead of enchiladas just now and it was fantastic. im sure it will be a hit tomorrow night

I made spanish rice the other night with the recipe, but I kicked it up a notch and threw in a few jalapenos. It was effing good.

Tomorrow at Casa del Burnet will be beef fajitas with spanish rice and refried beans.

Get about 3-4 Tbls olive oil just smoking in a sauce pan. Saute about 1/4-1/3 of a finely diced onion and a diced piece of bacon together until cooked. Add in a can of rinsed black beans and a little chicken stock. Hit with an immersion blender until they're as blended or chunky as you like. Thin with more stock if necessary. Season with salt, pepper, and a little cumin if you like.

Oh my gosh!!! This is amazing! I made the enchiladas, rice, and beans tonight after reading this post earlier today. Delicious!

I'm not completely satisfied with my refried beans, but I'll try again.

I also made my own powder from dried peppers.

Who knew this pale, Southern gal could cook Mexican food?
