J&S mixes meat from several deer to make a batch of sausage. Not a bad thing if you bring several deer in yourself...terrible if you get your head shot meticulously cared for and iced doe mixed with someones pissed all over himself, gut shot hung all day in camp rutting 4.5 yr buck. No thanks.

Got to tour J&S's full operation, and I will say compared to many processors I've been to, I was pretty impressed. Their level of sanitation, especially in the smoked meats and sausage room is pretty impressive. I wouldn't hesitate to take a take a deer there.

Just south of Austin and only about 5 miles from Cabela's in Buda. Just started doing this as a business, but has been doing it for fun since before high school where he was tops in the meats class about 10 years ago.

He is a family friend and good kid. You will get back all of your meat, but only your meat. If you use him, let me know and I'll meet you for a beer at pickup or dropoff. Tell him to call the Aggie attorney down the street and we can make plans. He has my number. He can also ship it, as he did to some guys in California who came over here to hunt.

If I didn't do my stuff myself, I would take it to him even if we weren't friends.

Fair warning, they don't use any preservatives in their sausages and they tend to go bad in about a year even if frozen. Well worth it though. Beats the hell outta Syracuse.

Fischer's in Meunster is also very good.

How does the sausage go bad just bc it lacks preservatives?

I've made fresh sausage for years and never had a problem with it going bad when I vacuum seal it.

Good sausage, good prices. Not packaged as well as some others

Whaley's - Hamilton
Not bad, casings a little tough. Good taste though.

Taxidermy:

Black dog Taxidermy- Hamilton
Does good work. Great to deal with, about $500 a mount with 10 month turn around

Trophy Taxidermy- Brownwood
Does outstanding work. Tans his own capes. $500 a mount with 10 or so month turn around.

Readfield Meats and Deli in Bryan off of Texas Ave. I took my deer to the guy at Taylor Meat Market last year and it wasn't that great and his jerky wasn't dried out enough so I left my deer this year in Bryan with Readfields. They're much better and make fantastic jerky. I'm pretty sure they mix other peoples' deer in with yours if you want sausage though.

Hudsons Sausage in Austin is fantastic, 1800 S. Congress, dont be fooled by a meat processor in the heart of hippieville down there.

Goodson Taxidermy, has shops in both Menard and Baytown, excellent quality and fairly priced.

Anyone know anything about Whitakers Processing in Iowa Park? Its the closest to the lease on the way home and they say they "specialize in sausage".

This guy runs a shop just behind his house. He works all year long. He does the usual processing and will do any sort of combination you want for sausage. He also does a Deer Wellington (which is amazing). A+ quality, they can be hard to get in touch with by phone, but someone is always at the place if you stop by. Very friendly and competitive prices.

I had 2 shoulder mounts completed through him. He sent them to someone else (can't remember who). It was about a 7 month turn around @ $385 each. They turned out great!

Processors:
E-NE Dallas = Po Boys in Merit. Good people and excellent products.
CS Area = Slovaceks in Snook. Haven't used them since I was in school, but they were very good back then.

Taxidermists:
Double D Taxidermy in Rockwall.
or
Ron Kelley in Rockwall.
both are excellent taxi's and reasonable prices. I will say that Ron is slow on return time, but he makes up for it in quality work.

To answer my own question from last year, wenzels in Hamilton is great. Took 4 or so there last year and will be going back. Be sure to grab a jar of pickles if you go.

Syracuse in Keller is about as good as I have ever used. They are better than Kuby's from my experience, but everyone has their own taste. One thing I do not care for at Syracuse is ther chorizo, but everything else I have had is very good.

Slovaceks had some of the best jalapeño and cheese sausage and summer sausage i've ever had from 2 of my deer last year. Absolutely loved them.

I've used Rudolphs in deep ellum in dallas at thanksgiving last year and they turned it around in about a week. Hard to beat that. Wasn't crazy about their smoked sausage, but they jalapeño and cheese is pretty good too.
