I just bought a hog from the local FFA and the processor they used didn't cure bacon so I told them to leave them in whole slabs. I am looking for cure seasoning mixes and recipes or other ideas like deep frying in strips like I saw on a cooking show in Miami that said they fried 1200 lbs. A day at the market.
