I'm assuming whoever the starter is tells the coaching staff what ball they like and its provided in practice. Usually Thursday before game day the qb's pick out their game day balls and they are stored separately and readied for game time
Air pressure high or low depending on what they want. If they like an older ball sometimes the stripes needed to be painted back on.
