breweries don't need to have barrel aged this or sour this to succeed, because very few people drink ONLY those. A huge amount of craft drinkers still want an IPA, a stout, a light or fruited offering, the typical seasonals, etc. This is the neighborhood brewery. They may never distribute out their taproom, let alone outside of Houston. This model has proven to work in markets way more saturated than Houston. Houston is still easily the least saturated market with say 500k people plus.

To put it in perspective, You listed ~15 breweries in Houston. The Houston metro population would have to be about 500,000 for it to be on par with Denver or Seattle metro per capita.

Or, with Houston's current population, there would need about 300 breweries to be equal.

I was in Albuquerque recently and I was told they have around 32 breweries. For a population of 700k that seems excessive. By comparison Houston still has less breweries than Albuquerque which seems absurd.

There is a very large segment of the Houston population that will never venture away from their Bud Light/Miller Lights. Not so much in Albuquerque.
