I am trying to plan for the upcoming season and am trying to get my TV situation lined out. I don't have a satellite subscription so really don't want to rely on a satellite. If I can utilize a WiFi hot spot, would watching live football games on Watch ESPN be an option on Apple TV?

I imagine finding a cellular hotspot or public WiFi with the appropriate bandwidth to stream video on campus might be difficult.

Buy a directv receiver off amazon, eBay, Craig's list.

Activate that receiver on a friend or family account for football season.

Done.

You can tether to your phone but download speeds start to suck as more people arrive.

Dish Network offers a month by month subscription that you can activate only during football season. That's your best bet. Get the Dish Network Tailgater.

If you have a student and are near s building, they could login to campus WiFI and you could use that with your phone and connect the phone to the TV.
