I would substitute the Serrano for 2 poblanos. Love the taste of poblanos

Tomatillo Salsa Verde:
2 cups tomatillos, dehusked
1-4 serranos, stem off
1 white onion
1 bunch green onions
1 bunch cilantro
Salt and fresh squeezed lime juice to taste (~2 limes)

Throw it all in a blender, blend until smooth

Eaglefordearl, do you take off the skins of the tomoatoes prior to throwing in the blender?

Take off the stems for sure.

Just the stems, everything else is fiber and too much work when you want salsa

I had this ingredients to make some salsa yesterday, just different ratios (half the peppers) and added some course black pepper and cumin to it. Heated the tomatoes, onion, and garlic in a cast iron skillet, and put it all in the blender. Turned out great! My family really liked it.

Luckily I saved some for myself that I'll selfishly finish off tonight with some cold beer.
